Whole grain oatmeal is an excellent source of dietary fibre for adults of all ages. When combined with fruit and various nuts and seeds, it creates a delicious and nutrient-rich option.

Oatmeal with Slivered Apricot and Assorted Nuts

  • 1 cup whole grain oatmeal
  • 1/4 cup ground flaxseed
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 4 dried apricots, sliced thin
  • 1/2 banana, sliced
  • 1 tbsp sunflower seeds
  • A few almonds and walnuts.
  • Drizzle of honey or pure maple syrup 

Prepare oatmeal on stove top according to package directions (two parts water to one part oatmeal). Once it begins to boil, turn heat down to lowest setting and simmer uncovered for approximately 10 minutes. Add ground flaxseed, vanilla, cinnamon and sliced apricots to oatmeal, stirring to combine.

Divide between bowls and top with sliced banana and a sprinkle of nuts and seeds. (If whole nuts are hard to digest, grind in a dedicated coffee grinder.) Add milk and a touch of honey or pure maple syrup.

Serves two.
